In a simple 3 x column word table, there seems to be no option to sort
highlighted numbers in one column by ascending order

Select the table. In Word 97-2003, click Table | Sort and choose which
column to sort by.

If you are using Word 2007, the Sort command is on the Home tab, in the
Paragraph group.

This doesn't account for the fact that Word (2003) sorts each numeric digit as a character, so you get results such as:
1
11
12
120
125
13

In the Sort dialog box, you can have Word sort based on numeric content.

Do note that Word always sorts whole rows, based on column content.
