Hmm, I believe the Styles dropdown shows styles as determined by the settings of
the Style Pane Options dialog box (in the Styles pane of Word 2007, click
Options).
The display settings for individual styles (the Recommend tab of the Manage
Styles dialog) are available only for character and paragraph styles.
On the other hand, in a document where formatting has been restricted, you can
control which styles display; this applies to table styles as well.

Ah, I hadn't realized that (or rather, had forgotten it, as I'm sure this has
come up before), and I didn't actually select one of the table styles to see
that the buttons don't become enabled for it. But I do have the Styles
dropdown on the QAT, and it evidently can't be prevented from showing ALL the
table styles.

the Styles pane in Word 2007 (and in Word 2010, I suppose). To *apply*
styles, including table styles, you can use the Apply Styles
(Ctrl+Shift+S) pane.
